Pork Chops with Apple Curry Sauce is my go-to website for recipes. I often start out by just Googling an idea, and a number of websites will pop up with suggestions. However, I always seem to end up at The recipes are simple to follow, call for ingredients that I'm familiar with and often have on hand. And the best part is the rating system and reviews. They rarely steer me wrong. So, one day last week, it was mid-afternoon and I didn't have a plan for supper (not unusual). I found some pork chops in the freezer and hopped online. Here's what I came up with. I'll be adding my own 5 star review!

Pork Chops with Apple Curry Sauce

4 (1 inch thick) pork chops
vegetable oil
salt & pepper to taste
1 large onion, diced
1 large apple, cored and diced
1 1/2 cups applesauce
2 cups apple juice (I used one cup)
1/4 c margarine (I used butter)
2 Tbs. chicken bouillon granules
1 clove garlic, minced
3 Tbs curry powder (I used 1 Tbs. and it was plenty)

1. Season pork chops with salt and pepper.  In a large skillet over medium-heat, brown pork chops in a small amount of oil, flipping once to brown both sides.  Arrange in baking dish.

2.  In the same skillet, melt butter over medium heat. Cook and stir onions and apples in butter until caramelized. 

3.   Stir in applesauce, apple juice, chicken bouillon, garlic and curry powder. Season to taste with salt and pepper.  Pour over chops and cover dish with foil.

4.  Bake in a preheated 400 degree oven for 40 minutes, or until pork chops are cooked through.

On the side, I served Seeds of Change quinoa and brown rice, that I buy at Costco.  It's a nice change from plain old rice, with a rich, nutty flavor.  I suppose I should add that this is not an endorsement, it's just my little ole' opinion.

Another yummy looking dish :) I love pork chops and do them fairly often, but I've never done them with a curry flavor. I must admit, I don't think I've ever had curry anything so I don't know if I like the flavor or not. Isn't that terrible?! The rest of the ingredients sound awesome though. I keep seeing that quinoa/rice blend at Sam's Club but have never bought it. I guess I need to look closer next time! :)

I love this product too! I even mix it in with cans of Progresso Chicken soups on nights when we just don't want to cook. It's very filling.
