Corn-Zucchini Saute

Sandra at Diary of a SAHM is hosting Cooking Thursdays again.  If you like trying new recipes like I do, check it out. 

This is a recipe I've had in my file for a few years.  It's especially nice to make in the summer when veggies are in season here.
 
 
CORN-ZUCCHINI SAUTE
 
3/4 cup chopped sweet onion
3 Tbs. olive oil
2 cloves minced garlic
3 medium zucchini, quartered and sliced
1 plum tomato, seeded and chopped
2 ears of fresh corn (I have used canned corn)
1/4 c. water
1 Tbs. dried parsley
1/4 tsp. salt
1/4 tsp. pepper
1/2 cup shredded cheese
 (I like to use crumbled Feta, but cheddar or Monterey Jack is good, too)

Saute onion in oil until soft.  Add garlic and cook for one minute.
Add zucchini and tomato.  Cook for 5 minutes.
Stir in corn, water, parsley, salt and pepper.
Bring to a boil, then simmer for 10 minutes.
Sprinkle with cheese, cover and let melt for a couple minutes.
