Lemon Zucchini Loaf

This recipe for Lemon Zucchini Loaf with Lemon Glaze is such a nice change from regular zucchini bread.  It's light and moist and flavorful.  (Source: nancycreative.com)

2 cups flour
2 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup canola oil
2/3 cup sugar
1/2 cup buttermilk
2 Tbs. lemon juice
Zest of one lemon
1 cup grated zucchini

Lemon glaze:
1 cup powdered sugar
2 Tbs. lemon juice

Set oven to 350 degrees.  In a large bowl, blend flour, baking powder and salt.  

In a medium bowl, beat 2 eggs, add canola oil and sugar, and blend well.  Add buttermilk, lemon juice and lemon zest.  Blend well.  Fold in zucchini. Add to dry mixture. (Don't over mix.)

Bake for 45 minutes or until toothpick inserted in center comes out clean.  Let cool, then glaze.
