Best Turkey Pot Pie Ever

I know that recipes for leftover turkey abound this time of year, but I made a Turkey Pot Pie yesterday that was so good, I have to share.  I found the recipe on one of my favorite sites -- .

If you have any bits of turkey left, all you need is a cup and a half (I used a bit more, just to clean it all up).  I had everything else on hand, too, all left-over from Thanksgiving.  I'll be making this again during the non-holiday season with chicken.
Turkey Pot Pie*

Recipe for double crust pie (10 inch)  -- I used the kind that comes in the red box:)
4 Tbs. butter, divided
1 small onion, minced
2 stalks celery, chopped
2 carrots, diced
3 Tbs. dried parsley
1 tsp dried oregano
salt and pepper to taste
2 cubes chicken bouillon
2 cups wtaer
3 potatoes, peeled and cubed
1 1/2 cups cubed cooked turkey
3 Tbs. all-purpose flour
1/2 cup milk

1.  Preheat oven to 425 degrees F.  Roll out bottom pie crust, press into a 10 inch pie pan, set aside.

2.  Melt 2 tablespoons butter in a large skillet over medium heat; add the onion, celery, carrots, parsley, oregano, and salt and pepper.  Cook and stir until the vegetables are soft.  Stir in the bouillon and water.  Bring mixture to a boil.  Stir in the potatoes and cook until tender but still firm.

3.  In a medium saucepan, melt the remaining 2 tablespoons butter. Stir in the turkey and flour.  Add the milk, and heat through.  Stir the turkey mixture into the vegetable mixture, and cook until thickened.  Cool slightly, then pour the mixture into the unbaked pie shell.  Roll out the top crust, and place on top of filling.  Flute edges and make 4 slits in the top crust to let out steam.

4.  Bake in preheated oven for 15 minutes.  Reduce oven temperature to 35 degrees F and continue baking for 30  minutes, or until crust is golden brown.

We've been picking at our leftovers so much, I don't think there's enough for this recipe. But it looks soooo good :)

So weird that you posted about turkey pot pie, that's exactley what I had planned for dinner. That is until the husband took a road trip to visit our son at Trapper's camp.
Oh well Pot pie tomorrow night!
