Mexican Corn Salad

I'm making it a point to try some new recipes this summer. Last week, I made this Mexican Corn Salsa, a recipe from our local supermarket ad.  It was a nice change from our usual fare. I served it with marinated grilled flank steak and sweet potato fries.

Mexican Corn Salad

2 cups corn kernels (I used canned)
1/4 cup red pepper, diced
1/4 cup green pepper, diced
1 tomato, diced
2 Tbs. red onion, diced
2 Tbs. olive oil
1 tsp. lime juice
1 Tbs. cilantro, chopped
1/4 tsp. ground cumin
1/4 tsp. each, salt and pepper

Combine all ingredients and serve.  Refrigerate leftovers.

Yum! I love corn and that looks perfect for barbqued anything.
